Making Ice Cream without a Machine
Although we specialise in ice cream machines, you don’t have to use one to make decent ice cream! In fact there are several methods that don’t require any fancy equipment.
One of the most straightforward is “ice cream in a bag”. Just add all the ingredients to a zip lock bag. Fill a larger zip lock bag with ice and a good hand full of salt. Then put the smaller zip lock bag inside the larger one. Seal the larger one and then massage and roll it around. After around 30 minutes of agitation, the smaller bag should be full of soft scoop textured ice cream!
Another method is to tweak the recipe so it contains so much butterfat it can be whipped without being frozen. Simply combine heavy cream with condensed milk and then whip it with a hand blender until it forms peaks. Then spread out it out in a plastic container and freeze.
If you’ve got a powerful blender like a Vitamix you can also use this to make ice cream. Make your ice cream base as usual and then freeze it in ice cube trays. Once it’s totally frozen, pop the cubes out into the blender, add a bit of extra cream for lubrication and blend until smooth. Don’t let the blender run too long though or it will start to melt!
If you’ve got lots of time on your hands and can keep attending the base as it freezes, this next one is super easy. Make your base, pour it into a bowl and stick it in the freezer. Every 20 minutes, open up the freezer and give it a really good stir with a fork, until it freezes.
And finally, this method is pretty much like the old ice and salt ice cream machines work. Get a large bowl and half fill it with ice. Add a handful of salt to the ice and mix it up. Then place a smaller bowl into the larger bowl, on top of the ice. Pour your pre-made and pre-chilled base into the smaller bowl. And then whip the mixture with a hand held mixer as it begins to freeze. You may need to change the ice and salt at least once as it melts.
